Cold smoking is my usual go-to, but I tried my first batch of hot smoked pinks just this week.
I did a dry cure on that round. I have a 2nd batch (no shortage of pinks right now, eh?) that just came out of your wet brine recipe.
I'm looking forward to seeing the difference the different styles of brining produces.

Thanks for the recipe Nelly. Just smoked a big batch of Kings from Barkley Sound and they came out excellent! Strongly recommend the recipe.

I've been using Tom's recipe for a couple of years now and everyone who tries it says it's the best smoked salmon they've ever had. that's pretty high praise considering if you knew my wife's family, they complain about damn near everything rofl

I made an impulsive decision and decided to try this recipe. I forgot to take the pin
bones out. Can I do this as I'm laying them out to dry? This is my second attempt
smoking salmon. I did a dry brine and they turned out great. But... I was not confident
the salt did the full job. I don't want anyone to get sick. No one has but this seems a better
method. No doubt better coverage. I digress. Can the bones be removed post brine?
I will be starting drying process on 5 September.

Hey FM,
Don't be shy about posting questions on our Forums... Heck, that's what we're here for!
Pulling pin bones is actually easier the farther along the drying process you go!

The flesh shrinks as it dries but the bones don't so they protrude, making them easier to pull.
I keep a clean set of quality stainless steel pliers for this purpose exclusively.

Pesky pin bones are the biggest reason that vacuum packed smoked salmon lose their seal...the "pinners" often poke tiny holes in the vac pack bags, causing them to leak air.
