What's for dinner?

Postby Smalma » Tue Mar 12, 2013 5:22 am

Thanks to generosity of a good buddy and fishing partner the wife and I had the classic PNW dinner last night.

The center piece was a large chunk of fresh Columbia River spring Chinook surround by fresh steamed asparagus, pasta, bread sticks and a favorite Riesling. With high quality fish simple is often the best. The fish after a light sprinkling of brown sugar, some sea-salt and crack pepper it went on the Barbie and monitored closely for the prefect "do" - wow what a meal!

Don't know if salmon on the table can get any better than that first fresh Columbia springer of the year. The fish that provided the meal last night was above average for even a Columbia springer; literally melted in your mouth.

Plans laid to hopefully intercept some in a couple weeks and hopefully I will be able to "pay forward" the gastronomic joy of the Columbia springer!
