Smoked Fish question

Can you freeze fillets before smoking? I would like to get 10 or so fillets together in order to smoke. If I hook a fish or two can I freeze the fillets until I have a full smoker?

Absolutely! Vacuum pack 'em if you can, try to keep the meet from contacting air otherwise.

What NOFish said! Not a problem at all to freeze them first, just don't let'em get freezer burned. Nelly makes the best smoked salmon on the planet and he puts the salmon in the brine when it's still frozen.

I'll vacuum seal it, freeze it, smoke it, and freeze it again. It always turns out fine.
