Smoking sea bass

I was wondering if anyone has ever smoked sea bass before? A buddy of mine said that he had some awhile back and thought it was outstanding. Do you use the same salmon/trout brine? Any helpful tips would be appreciated as I have a freezer full of sea bastages from a trip with Robbo up in SE Alaska. Thanks Fives :D

Hey Fives! Dad smoked up a bunch of sea bass last year and they were a little on the dry side. Just my .02...but I think the highest use for them is in tacos or pan fried drool

Thanks brotha, those duck kabobs looked pretty tasty though. What are you guys down to; only a couple months left before your up watching reruns of "Fishermen's Heaven" doing the 3a.m. feeding?

I m with Rob sea bass can be dry just not enough fat to them although you might be able to get some smoke flavor if you keep the temp under 80 then finish in the oven . Try cajun blackened black bass tacos thems some good eats.

I have a ton of fish taco tricks up my sleave Ill leave you with this .
If you don't do this already you will never go back
take two of your favorite brand and size corn tortilla run them under cold tap water get them wet on both sides then drop them into a hot oiled pan one ontop the other sear them until they make a scratchy sound when you slide them around then filp and repeat this is the only way to bend these tacos.
