Dexter Russell is one of the best out there and Forschners are good too. Pretty sure I saw some Dexters at Costco Business in Fife the other day for cheap cheap. Hope that helps ;)

Cutco filet. They are spendy but when they go dull just send in for a sharpening

The Victorniox Forschner 12" Cimitar with Granton edge Works extremely well on big nooks. And Blade Tamer makes a nice sheath for it.

those are all good knives, just remember to get a good steel and use it often to keep your edge in optimal shape. even a $100 knife will get the edge knocked off alignment quickly slicing through ribs and junk.

I have had a cutco for years, cuts through salmon like it would for butter. It also has a blade that adjusts to extend for the larger fish.
