When I was a kid, my uncle used to make a squirrel gravy over biscuits for breakfast that was really delicious.

These days though, the squirrel-offs are all about truffle oil, schezuan peppercorns, quinoa & of course if you are not gluten-free the judges turn their noses up at you. rofl

I have never tried this squirrel gravy over biscuits. Can You tell me how it is made..?? I have to try it..??

Squirrel gravy over biscuits sounds pretty darn good. Thinking I was Huck Finn I shot a couple of squirrels as a kid and ate them and there sure wasn't much meet on them. Pretty much picking tiny strands of meet off their boney asses. The squirrels back east must be a lot meatier cuz our northwest squirrels are nothing but skin and bones ;)

I was just a kid when my uncle used to make that gravy. I remember is was really good, but I never saw him prepare it.

As a teenager I did do some squirrel hunting of my own, back in Delaware. Mainly I just braised them like you would rabbit. There wasn't a ton of meat on them, but a couple would make a decent meal. It was mainly the hind quarters that had the worthwhile amounts of meat on them.
It was comparable to the amount of meat you'd get off a quail.
