Squid at Seacrest park

After moving to Seattle from Tennessee two years ago, my fall now has one activity I always look forward to and that is catching squid! These squid are a blast to catch and great eating. Head over to Seacrest park from 8-10pm with a light action rod and a few squid jigs. They are not difficult to catch and would be a lot of fun for beginners and kids.

Soak the squid in the sauce:
¼ cup brown sugar
¼ cup olive oil
¼ cup soy sauce
3 T lemon juice
1 teaspoon lemon peel
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried thyme
¾ teaspoon garlic powder
½ teaspoon salt

For thirty mins.

Add 2 cups of cooked sausage, 2 cups of panko, two eggs and half a cup of parmesan cheese for the stuffing.

Stuff each squid and grill, 5mins and flip on each side on high. Wet in the sauce as you cook.

Make extra sauce for dipping with the meal, and enjoy!
